Bella Hadid recently shared her “#1 Salad” on TikTok, and unsurprisingly, it went viral. If you’re looking for healthy salad ideas, or the perfect side salad for your BBQ or garden party, look no further!  

With crunchy sweet red bell peppers, creamy avocado, spicy arugula, fresh cucumber, and zingy lemon, tossed with fresh parmigiana, olive oil, and balsamic glaze to bring it all together, it’s a must-try! To add extra crunch and flavor, sprinkle over your favorite toasted nuts, like pine nuts, walnuts, or cashews. 

Plus, it’s super healthy with a good amount of healthy fats, cleansing lemon and cucumber, and antioxidant-rich green goodness! 

Simply top with your favorite protein, like chargrilled chicken, roasted chickpeas, marinated salmon, or lashings of steak, and you have a light and delicious, healthy lunch that will liven up your taste buds and keep you satisfied until dinner! 

Ingredient

Small box of baby arugula — 5oz box or 142 grams or spring mix 

½ small thinly sliced or chopped red bell pepper 

½ cup chopped fresh parmigiana — from a block 

1 cup of finely diced cucumber 

½ diced avocado — leave out if allergic 

pinch of salt 

juice of 1/2 a lemon 

olive oil to taste — about 2 tablespoons 

drizzle of balsamic glaze or balsamic vinegar 

Expert Tips: 

Use any kind of mixed greens and leaves if you’re not keen on arugula. 

Fresh parmigiana makes all the difference! 

Swap out the parmigiana with a plant-based version to make it vegan. 

How to make it

Prep Time:10  

Serves: 2

  1. Chop up the bell pepper into thin slices or dice them if you wish. 
  2. Slice or dice the cucumber and avocado, add it to a bowl with the rest of the ingredients. 
  3. Add salt to taste, lemon juice, olive oil and toss. Drizzle on balsamic glaze and enjoy. 
  4. This salad should be eaten right away as the arugula will wilt. If you want a salad that will hold up better in the fridge, please use kale instead.
