Choose traditional red and green pairings, rich holiday spiced concoctions, or light-and-refreshing blends with this pick of the best Champagne cocktails to celebrate Christmas, and toast to the new year in style!  

The Harvest Sparkle  

This Bourbon champagne cocktail one has the winter season written all over it. Featuring rich apple-spiced cider, aromatic rosemary, zingy ginger, and warming whiskey, and sweetened up with orange juice and honey, this will warm your throat and your heart. The apple cider syrup is packed full of warming holiday spices like ginger, cloves, and cinnamon that add that rich, spicy, Christmas aroma to the air.  

To make it, in a saucepan, whisk the honey, ginger, cinnamon, cloves, and orange juice together until it starts to bubble. Remove from the heat and let it cool for 5 minutes. In a pitcher or shaker, mix the honey syrup and whiskey together with a good amount of ice so that it’s completely chilled. Strain into a different pitcher or serving glass, but let it sit for too long because you don’t want it to become watered down in the ice. 

Keep refrigerated and just before serving, add prosecco or champagne to top the glass and garnish with a ½ sprig of rosemary for a festive feel. 

Ingredients 

For The Cider Honey Syrup:  

1/2 cup honey  

1/4 teaspoon ground ginger  

1/4 teaspoon ground cinnamon  

1/8 teaspoon ground cloves  

1 cup orange juice  

For A Large Pitcher (serves 18):  

2 1/4 cups whiskey or bourbon  

1 1/2 cups of the cider honey syrup (entire batch)  

2 1/4 cups prosecco, champagne, or sparkling white wine  

9 sprigs of rosemary  

For A Single Cocktail:  

1-ounce whiskey or bourbon  

1 tablespoon + 1 teaspoon cider honey syrup  

1-ounce prosecco, champagne, or sparkling white wine (or enough to top off the glass)  

1/2 sprig of rosemary 

St Germain Champagne Cocktail  

Elderflower liquor, lemon, and gin make up this tangy, fresh champagne cocktail that’s super easy to make. The uplifting citrus fruit and botanical notes make this ideal for a morning breakfast or brunch as a chic alternative to Bucks Fizz. The name comes from the elderflower liquor, St Germain, and it’s pretty new to the cocktail scene, having only been brought to the masses in the past 20 years. 

It’s worth keeping on your drinks trolley for its ability to bring a tangy, refreshing note to concoctions aplenty. Welcome dinner party guests with this light and refreshing mix, with a touch of sweetness from the maple syrup, for a sophisticated feel. 

Offer it with a French accent to impress your guests. Serve with a lemon twist or a rosemary sprig. Make your St Germain cocktail non-alcoholic by adding a sparkling non-alcoholic cider, wine, prosecco (no-secco), or grape juice.  

Place the St Germain (or any elderflower liquor), gin, lemon juice, and syrup in a cocktail shaker with ice. Shake for 15 seconds until cold, then strain the liquid into a champagne flute. Top off the glass with champagne, a festive garnish, and serve. For a dinner party or holiday, get-together makes a large batch ahead of time, and measure out 6 tablespoons of syrup per glass. 

Ingredients 

1 ounce (2 tablespoons) St. Germain  

1 ounce (2 tablespoons) gin  

½ ounce (1 tablespoon) lemon juice  

½ ounce (1 tablespoon) simple syrup or pure maple syrup  

3 ounces (6 tablespoons) champagne (about ½ glass)

Sparkling Fig Champagne Cocktail  

This aesthetic Sparkling Fig Champagne Cocktail adds a sophisticated quality to your new year's party. There’s just something about figs – their unique pink appearance makes them super Instagrammable. 

All you need is fresh figs, sugar, vodka, and your fizz of choice. Fruity flavors could work well in this cocktail, or, if you don’t have vodka, gin could work too – it just depends on your preferences and what you have in! The sugar can be left out completely, but it does enhance the sweetness of the figs.  

Place the figs, sugar, and vodka in the bottom of a cocktail glass or shaker and muddle until the figs have released all their juice. Strain into a coupe glass and top with chilled champagne. If you don’t have a strainer, don’t worry – it just adds a smoother appearance. 

Ingredients 

2 fresh figs  

2 teaspoons granulated sugar  

1 ½ ounces vodka  

4 ounces champagne, chilled (or sparkling wine) 

Pomegranate Champagne Cocktail  

This sweet holiday cocktail would be ideal for Christmas Day thanks to its traditional colors. You can make this to suit the ingredients you can get hold of too. Although pomegranates are delicious, it would also work with blood oranges or cranberries.  

Combine the sugar, water, rosemary in a small saucepan and heat to simmer. Simmer for 2 minutes then remove from the heat. Let it steep for 30 minutes before discarding the rosemary sprigs. 

You can store this syrup in the fridge in a concealed container. For a single cocktail, mix all ingredients in a cocktail glass, garnish with pomegranate seeds and rosemary and serve. Mix all of the ingredients in a pitcher and garnish with fresh rosemary and pomegranate seeds. 

Ingredients 

For The Rosemary Simple Syrup: 

1//2 cup of white sugar  

1/2 cup of water  

2 sprigs of rosemary  

For A Single Cocktail: 

1/4 cup of pomegranate juice  

1 tablespoon (or more to taste) of the rosemary simple syrup  

1 cup of champagne  

for serving: extra sprigs of rosemary, pomegranate seeds  

For A Pitcher:  

6 ounces of pomegranate juice  

1 bottle of Korbel® Brut  

4 tablespoons of rosemary simple syrup  

for serving: extra sprigs of rosemary, pomegranate seeds 

Cranberry Champagne Cocktail  

This vibrant Christmas cocktail is perfect for entertaining at dinner parties and holiday get-togethers, thanks to its scarlet hue. You’ll only need Cointreau (or any other orange liquor), cranberry juice, and Champagne. You might already have them in the cupboard! 

The important thing about this one is that the cranberry juice is 100% pure cranberry juice because many of them have added sugar. 

With the pure variety, you get all the delicious fruitiness without any high-sugar or sweetened inauthentic taste. It tastes crisp and tart, ideal for a refreshing and tangy celebration, and to add a festive feel to your ordinary glass of bubbles! 

Place the Cointreau (or orange liquor) and cranberry juice into a cocktail shaker with ice. Shake for 15 seconds until cold. Strain the liquid into a champagne flute. Top off the glass with champagne, garnish with a rosemary sprig and serve. 

If you want to, make a large batch of Cointreau and cranberry juice ahead of time, then measure our 6 tablespoons of mixture per glass.  

Want a mocktail instead? You can also make this delicious cocktail non-alcoholic with a low or no-alcohol sparkling wine, cider, or prosecco, or sparkling grape juice, and replace the orange liquor with orange juice.   

Ingredients 

2 tablespoons Cointreau, or other orange liqueur   

4 tablespoons 100% cranberry juice (unsweetened)  

1/2 glass champagne (6 tablespoons) *  

For the garnish: 1 rosemary sprig, whole cranberries  

Expert Tips  

One bottle of champagne will make about 8-10 glasses.  

Swap the champagne for non-alcoholic wine, prosecco (nosecco), sparkling cider, or grape juice to make it a mocktail.
